One of the questions I get from my readers all the time is “How can I eat healthy when I am short on time?” Well, here is a great answer: 10 Minute Stir-Fry Dishes.
I love stir-frying my food because you can use any combination of vegetables that you have on hand for a delicious and healthy meal.
Today I am sharing my favorite version of stir-fried chicken and vegetables, but feel free to experiment and find your own favorite.

10 Minute Stir-Fry Chicken and Vegetables
Ingredients:
1 tablespoon olive oil
1 red bell pepper, thinly sliced
1 green bell pepper, thinly sliced
1 medium zucchini, sliced
1 medium yellow squash, sliced
1 cup fresh broccoli, chopped into bite-sized pieces
1/2 cup onion, diced
2 chicken breasts, fully cooked and diced*
3 tablespoons low-sodium teriyaki sauce (or homemade teriyaki sauce)
*I like to make a big batch of my Favorite Grilled Chicken at the start of the week and then use that chicken all week long in my lunches. Any leftover chicken or even rotisserie chicken will work for this recipe.
Directions:
Pour olive oil into the bottom of a large skillet and heat over medium high heat. Drop the vegetables in to the skillet and cook, stirring occasionally for 4-5 minutes (or until vegetables start to turn tender). Add fully cooked chicken and heat until warmed through. Pour teriyaki sauce over vegetables and chicken and stir until completely incorporated.
Serve and enjoy!
