If you are focused on healthy eating, a slow cooker might be one of the best kitchen gadgets you could have. Slow cooking is a healthy way to cook. The slow-moist heat cooking method is one of the healthiest ways to cook meat, and also a great way to prepare tough cuts of meat into delicious tender bites.
A slow cooker is a also a great way to get more veggies in your diet- you can throw together lots of vegetables and meat for a delicious meal, or make a filling soup like this recipe.
Many older slow cooker recipes incorporate a lot of fat into creamy casseroles and soups, but slow cookers have evolved over time and so have the variety of simple recipes and types of foods you can easily cook inside.
With a little practice, you can find a wide variety of foods to cook in a slow cooker that are healthy, simple, and delicious.
WHAT ARE THE ADVANTAGES OF USING A SLOW COOKER?
Slow cookers are essential in any kitchen. There are many benefits to using a slow cooker including takes little prep to make a great meal, easy to use, easy clean up, and deliciously flavored food.
One of my favorite reasons to use a slow cooker is that it makes meal prep so easy. With a little planning ahead of time (at least 6-8 hours before), you can have a delicious meal on the table without a lot of prep work or time spent in the kitchen.
If you can find a little time to prepare, you can eat well all week with amazing meals that you just throw into the slow cooker and turn it in. It cooks all day and is ready by dinner time. Slow cookers also bring out the flavor of foods and make them taste better than normal. Easy and delicious- it’s a win-win situation.
Slow cookers are a simple kitchen appliance that everyone should have. You can always find the time to make a delicious and healthy meal with a slow cooker- it just takes about 10 minutes of prep in the morning. You add in the food, turn it on, and come back a few hours later to a great meal.

- 1 (15 oz) can pinto beans, drained and rinsed
- 1 (15 oz) can black beans, drained and rinsed
- 1 (15 oz) can corn, drained
- 2 (10.5 oz) cans Rotel tomatoes
- 1 (8 oz) can tomato sauce
- 1 (4 oz) can diced green chilis
- 1 tablespoon chili powder
- 1 tablespoon cumin
- 2 tablespoons homemade taco seasoning (or 1 packet taco seasoning)
- 1 lb boneless, skinless chicken breasts
- favorite toppings (cheese, avocado, tomatoes, salsa, sour cream, lettuce, etc)
- Spray slow cooker with non-stick cooking spray.
- Combine all ingredients in slow cooker and mix well, making sure that the chicken breasts are covered. Cook on low for 6-7 hours or high for 3-4 hours.
- Shred chicken with two forks, then mix well.
- Scoop into bowls and top with your favorite toppings.
