This quick recipe could not be simpler – the flavor of the squash is delicious, which means you don’t need a lot of seasonings to enhance it. This will become one of your favorite go-to side dishes!

Roasted Butternut Squash
Prep time:  10 mins
Cook time:  30 mins
Total time:  40 mins
Serves: 6
 
Ingredients
  • 1 butternut squash- peeled, seeded, and cut into 1 inch cubes
  • 2 Tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
Instructions
  1. Preheat oven to 400 degrees.
  2. In a large bowl, mix together squash, olive oil, garlic, and salt and pepper. Spread squash in a single layer on a large baking sheet.
  3. Cook in the preheated oven for 25-30 minutes or until squash is tender and lightly browned.
