They also are really high in vitamin C, iron, fiber, and vitamin B6. So they next time that you think that you shouldn’t eat a potato, think again!
This is one of my favorite ways to prepare potatoes – it makes the perfect side dish to any meal and kids LOVE them.
Roasted Garlic Potatoes

A quick and easy side dish that comes together in a matter of minutes!
Ingredients
- 3 pounds red potatoes, diced
- ¼ cup olive oil
- 1½ teaspoons salt
- 1 teaspoon freshly ground black pepper
- 5-6 cloves garlic, minced
- 2 tablespoons fresh parsley, minced (or 1 teaspoon of dried parsley)
Instructions
- Preheat the oven to 425 degrees F.
- In a large bowl, mix together the potatoes, olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan covered in with aluminum foil and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to prevent burning and even cooking.
- Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.
