Roasted Garlic Potatoes

A quick and easy side dish that comes together in a matter of minutes!
  • 3 pounds red potatoes, diced
  • ¼ cup olive oil
  • 1½ teaspoons salt
  • 1 teaspoon freshly ground black pepper
  • 5-6 cloves garlic, minced
  • 2 tablespoons fresh parsley, minced (or 1 teaspoon of dried parsley)
  1. Preheat the oven to 425 degrees F.
  2. In a large bowl, mix together the potatoes, olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan covered in with aluminum foil and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to prevent burning and even cooking.
  3. Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.
