This recipe is quick to throw together, but has amazing taste and flavor!
Healthy and easy? It doesn’t get any better than this!
Slow Cooker Caribbean Chicken
4 boneless skinless chicken breasts
1 cup salsa
1/3 cup orange marmalade
2 tablespoons brown sugar
2 tablespoons fresh lime juice
1/4 cup fresh cilantro, finely chopped
Spray slow cooker with non-stick cooking spray and place chicken breasts inside. In a bowl, combine salsa, marmalade, brown sugar, lime juice and cilantro and then pour on top of chicken.
Cook on low for 6-7 hours or high for 3-4 hours.
Remove chicken from slow cooker and serve over rice (optional) and top with salsa mixture in the slow cooker.
Makes 4 servings.
