Whole Wheat Banana Muffins on Tone-and-Tighten

Let’s be honest – most muffins are loaded with sugar and fat and really aren’t that good for you . . . who wants to start their morning off with a huge sugar crash?! And let’s talk calories- did you know that one blueberry muffin from Costco will cost you over 600 calories?! That’s a huge percentage of your daily allowance! However, these muffins are different! Not only do they taste amazing but they are made with whole wheat and use honey to make them sweet and moist. Add some eggs for protein and you’ve got a breakfast that will power you through your morning!

Whole Wheat Honey Banana Muffins
Ingredients:
3 1/2 cups whole wheat flour
2 teaspoons baking soda
1 teaspoon salt
2/3 cup olive oil
1 cup honey
4 eggs
2 cups mashed ripe bananas
1/2 cup hot water

Directions:
In a medium-sized bowl, mix dry ingredients together.
In a separate bowl, mix oil and honey together, then add eggs and beat until completely incorporated. Add in bananas and mix well.
Add dry ingredients to wet ingredients, alternating with hot water; mix well after each addition.
Spoon batter into 24 greased muffin cups; bake at 325 degrees for 15 minutes, or until muffins are golden brown and test done. Remove from oven and cool on rack.

Muffin liners
Mixing bowl

    This is a great recipe! My toddler is chowing down on one as we speak. Have a question for you. Have you ever tried substituting unsweetened applesauce for the oil in this recipe? I have substituted it for the fats in other recipes and was interested to know if you have tried it. If not, I can try it the next time I make it. Just wondered how they would turn out. Thanks for the great recipe!

      Thanks so much for your comment! I haven’t tried that substitution in this particular recipe, but I’m confident it would work! The “applesauce for oil” substitution is one that I do use regularly – please let me know how it turns out! Thanks for following T&T!
