Ahhhh breakfast. We all know it as the most important meal of the day – how come it has to be so difficult to find something hot, delicious, and healthy? So often we just settle for our cereal, bagels, or muffin as we are running out the door and call it good.
Well today is the day that we reclaim breakfast!
Today I wanted to share with you one of my favorite hot, healthy, and delicious breakfast meals – a microwave egg omelette that literally takes less than three minutes to prepare!

This recipe is actually not only one of my favorite breakfasts, but also my go to post workout meal. It’s packed with delicious protein that’s vital to your muscles repairing and rejuvenating. If you are looking for a quick, convenient way to add a ton of protein to your diet then this is the recipe for you!
After a workout I like to prepare one of these omelettes with my favorite protein shake (demonstrated in the video found below). When prepared as demonstrated the egg omelette dish itself has 15 g of protein in it. When combined with the protein shake demonstrated below that total actually skyrockets to 85 g! 85 g of protein in one hot, delicious breakfast! That’s amazing!
Many people I have spoken with don’t realize it – but you can actually make scrambled eggs in your microwave! They take less than two minutes, come out hot and delicious, and you can’t even tell the difference if you would have scramble them on the stovetop or griddle.
I’m going to prepare this meal for you literally from nothing so I can show you exactly how quick and easy it is to throw together. Push play on the video below and see the recipe in its entirety down a little bit further.
- 2 Eggs
- 2 T chopped onion and peppers
- 1T shredded cheese
- 1 T chopped ham
- 1 T skim milk
- Spray a bowl with non-stick cooking spray. Mix all ingredients together until well-combined. Microwave on HIGH power for 1 minute 30 seconds (1100 W microwave; cook times will vary depending on your power output). Salt and pepper to taste.
