When you combine the freshness from the veggies with the smoky flavor from grill – you’ll have the neighbors all stopping by and peaking over your fence wondering what smells so good! These are the prefect side dish with any meal and so easy to prepare in larger quantities (big families, parties/get-togethers, work parties, etc).

Let me first start off by introducing you to the newest member of my family! 🙂 This is the all-new
Camp Chef Woodwind Wood Pellet Smoker
Unlike your traditional propane grills, this smoker heats up by feeding wood pellets into a fire and then cooking your food over the smoke. The result is perfect, wood-smoked flavor every time. We’ve done chicken, beef, pork, and vegetables on it – all of them have turned out phenomenally (you can even cook more “untraditional” grill items such as pizza and cookies!)
The secret lies in the “low and slow” cooking style. When cooking on a traditional propane grill, you typically cook your food about 5-10 minutes on each side. With the Woodwind Pellet Smoker I typically turn my thermostat to about 250 and then smoke food for over an hour. In fact – larger food like ribs and brisket smoke for 8+ hours! This makes them incredibly tender and ridiculously flavorful!
My favorite part is that the temperature is controlled and monitored digitally. Seriously – you turn it on, set the desired temp, put your food on, and then walk away. It doesn’t only make your food more flavorful, but easier to prepare also!

Prep time: 15 minutes
Cook time: smokes for 90 minutes
Total time: 1 hour 45 min
Serves: 6-8 people
Ingredients: (The cool part about this is you can use as much or as little of each veggie as you want!)
1 Zucchni
1 Yellow Squash
1 Green Bell Pepper
1 Yellow Bell Pepper
1 Red Bell Pepper
6 ounces – Petite Baby Carrots (1/2 of a 12-oz bag)
15-20 Cherry Tomatoes
1/2 Yellow Onion
2 T Extra Virgin Olive Oil
3 tsp Galic Salt
Salt and Pepper to taste (I use about 1 tsp of each)
1/4 C Parmesan Cheese
Instructions
1. Preheat smoker to 250 degrees.
2. In a large bowl, slice up all the vegetables into bite-size chunks; approximately the same size.
3. Cover with olive oil, garlic salt, salt, and pepper, and stir to coat evenly.
4. Place vegetables in a grill-safe aluminum pan (or make one out of tin foil as indicated in the video above) and put on the smoker.
5. Cook time is approximately 1 hour or until vegetables are cooked to desired doneness.
6. Top with parmesan cheese and enjoy!
