I am always in search of a healthy and delicious meal that my whole family (including my picky eaters) will eat and this is one of our favorites. My kids love to use the taco meat to make soft tacos on tortillas, but my wife and I stack it on a bed of lettuce and load it with vegetables to make a fresh and healthy meal.
Ground Turkey Taco Salad
Ingredients:
1 lb ground turkey
1 medium onion, diced
1(15 oz) can pinto beans, drained
1 tablespoon taco seasoning (my favorite is my easy homemade taco seasoning)
1 cup salsa
6 cups romaine lettuce, roughly chopped into bite sized pieces
favorite vegetable toppings (tomatoes, carrots, avocados, peppers, jalapeños, etc)
other various taco toppings (salsa, low-fat cheese, fat-free sour cream, etc)
Directions:
In a large skillet, brown ground turkey and onion until turkey is no longer pink. Drain, then add in beans, taco seasoning, and salsa. Let simmer for about 5 minutes to let the flavors meld together.
Divide lettuce onto five plates, then top with ground turkey. Let each person choose their favorite vegetables and other various toppings to add to their salad.
For a dressing, use your favorite salsa or low fat salad dressing. My personal favorite is to mix one part salsa with one part low-fat ranch to make a “salsa ranch”. It’s perfect for this salad.
