Loaded Scrambled Eggs on Tone-and-Tighten

 

Eggs are one of my favorite foods and they are so easy to load with healthy vegetables, which will keep you feeling full and fill you up. This recipe is one of my favorite ways to enjoy eggs.

Loaded Scrambled Eggs
Prep time:  5 mins
Cook time:  10 mins
Total time:  15 mins
Serves: 4 servings
 
Ingredients
  • 1 red onion, diced
  • 1 red pepper, diced
  • 2 tablespoons olive oil
  • salt and pepper to taste
  • 8 eggs, beaten
  • ½ cup cheddar cheese, shredded
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons green onions, thinly sliced
Instructions
  1. Heat the olive oil in a large nonstick skillet over medium heat.
  2. Add the onion, bell pepper, salt and pepper. Cook, stirring occasionally, until tender.
  3. Add the eggs and cook, stirring frequently, until the eggs are just set, 1 to 2 minutes.
  4. Add the cheese and cook until just melted.
  5. Remove from heat and stir in the tomatoes and parsley.
