Loaded Scrambled Eggs

Serves: 4 servings
- 1 red onion, diced
- 1 red pepper, diced
- 2 tablespoons olive oil
- salt and pepper to taste
- 8 eggs, beaten
- ½ cup cheddar cheese, shredded
- 1 cup cherry tomatoes, halved
- 2 tablespoons green onions, thinly sliced
- Heat the olive oil in a large nonstick skillet over medium heat.
- Add the onion, bell pepper, salt and pepper. Cook, stirring occasionally, until tender.
- Add the eggs and cook, stirring frequently, until the eggs are just set, 1 to 2 minutes.
- Add the cheese and cook until just melted.
- Remove from heat and stir in the tomatoes and parsley.
