This makes an awesome side dish and can be thrown together in a matter of minutes.
Oven-Roasted Parmesan Cauliflower
Ingredients:
1 head (about 2 1/4 pounds) cauliflower, trimmed and cut into florets
3 large cloves garlic, minced
1/4 cup olive oil
2 tablespoons lemon juice
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 tablespoons grated Parmesan cheese
1/4 teaspoon ground black pepper
2 tablespoons grated Parmesan cheese
Equipment needed:
15x10x1″ Jelly Roll Pan (Cookie Sheet)

Directions:
Preheat an oven to 450 degrees. Cover a large baking sheet (I used a large 15x10x1″ cookie sheet) with aluminum foil.
Mix cauliflower florets and garlic in a large bowl. Drizzle olive oil and lemon juice over the cauliflower mixture; season with salt and pepper. Toss cauliflower mixture to coat and spread into an even layer onto prepared baking sheet.
Roast in preheated oven for about 15 minutes, turn the cauliflower, and continue roasting until soft, about 10 minutes more. Sprinkle Parmesan cheese over the cauliflower to serve.
