Greek Yogurt Chipotle Dressing Recipe

This dressing is one of my favorites for salads. The chipotle’s add an amazing flavor with just a little kick of heat. And you would have no idea that the creaminess comes from Greek yogurt!

Greek Yogurt Chipotle Dressing Recipe
Ingredients:
1 (6 oz) container plain Greek yogurt (I used Chobani fat-free)
1 chipotle in adobo sauce (I found a can of this on the Mexican foods aisle at my local grocery store)
1 teaspoon adobo sauce (from the can of chipotles)
2 cloves garlic
1 tablespoon lime juice
1/4 teaspoon cumin
1 tablespoon homemade taco seasoning
salt and pepper to taste

Directions:
Cut open the chipotle pepper and scrape out the seeds (be sure not to touch your eyes after handling the pepper- it will burn! I am speaking from experience! Ha ha). Place all the ingredients in a blender and and blend until fully combined and dressing is smooth.
Add more seasonings as desired.

Makes about 2/3 cup of dressing (about 4-5 servings).
