So there I was on my own last night. The Mrs was away and I had my three little monkeys for dinner time. I had some chicken, some peppers from my garden, a hankering for some Mexican food, and a desire to wow my wife. I started playing with some different recipes and ingredients and this is what I came up with! A new spin on some good ol’ fajitas – kebobs on the grill! I was pleasantly surprised, my kids killed them, and my wife will keep me around for another week! Hope you enjoy them as much as we did…
1/2 C Extra Virgin Olive Oil
2 T Vinegar (I used white)
1T Chili Powder
1 T Lime Juice
1 T Honey
1 T Garlic Powder
1 t Cilantro (an essential in Mexican cooking)
1/2 t Paprika
1/2 t Ground Black Pepper
1/2 t Cumin (essential #2 to cross the border)
1-2 pounds cubed chicken breast
3 peppers (I used a green, orange, and red for flavors and color
1 onion
In a 1 gallon resealable bag mix the olive oil, vinegar, lime juice, honey, and all the spices. When thoroughly mixed add your chicken and let sit in the fridge… the longer the better (mine sat for about an hour).
Grab some skewers and alternate chicken, peppers, and onion in whatever order you like.
Throw them on the grill over medium heat, giving a quarter turn every 2 or so minutes.
Cook to desired doneness… mine took about 10 minutes.
I served them on whole-wheat tortillas with some fat-free refried beans, reduced-fat cheese, and my favorite picante sauce. I’m not going to brag… too much… but they were phenomenal!
