No more excuses-
Breakfast really is the most important meal of the day.
Whip up a batch of these cookies and have a quick breakfast-on-the-go for the next week! These are also great for a healthy snack (my kids loved them!).
Healthy Oatmeal Breakfast Cookies
Ingredients:
1/2 cup mashed bananas
1/2 cup peanut butter
1/2 cup honey (or agave)
2 teaspoons vanilla
1 cup rolled oats
1/2 cup whole wheat flour
1/4 cup vanilla protein powder
2 teaspoons cinnamon
1/2 teaspoon baking soda
1/2 cup raisins
Directions:
Preheat oven to 350 degrees.
In a large bowl, mix together bananas, peanut butter, honey, and vanilla. Mix in oats, flour, protein powder, cinnamon and baking soda and stir until completely combined. Fold in raisins.
Spray 2 cookie sheets with non-stick cooking spray and drop dough by large spoonfuls on to cookie sheets. Flatten cookies to about 1/2 thick. Cook for 12-14 minutes, then remove from cookie sheets and let cool.
Place a couple cookies in resealable freezer bags, stick them in the freezer, and then pull them out when you need a quick breakfast!
Makes 2 dozen cookies.
