Just because you are trying to eat healthy doesn’t mean you have to eat blandly.
I love eggs and could easily eat half a dozen every day, however, that wouldn’t bode well for my health.
This is one of my favorite ways to eat eggs, plus get in a a big serving of vegetables. Plus, if you make it in the microwave, it will take less than 5 minutes!
Avocado and Egg White Scramble Recipe
Ingredients:
3 egg whites
1 Tablespoon skim milk
1/2 avocado, chopped into small pieces
1/3 cup salsa (such as my Homemade Salsa)
1 Tablespoon shredded cheddar cheese (optional)
Directions:
Place egg whites in a bowl sprayed with non-stick cooking spray. Pour in milk and mix well. Place bowl in microwave and heat for 60 seconds. Stir, and microwave for 60 more seconds or until eggs are full cooked (might take just a little longer, depending on your microwave).
Fluff eggs with a fork and top with avocado, salsa and cheese.
