Healthy Honey Banana Muffins {No refined sugar}

Sweetened with honey and banana (no refined sugar) and made with whole wheat flour, these Whole Wheat Honey Banana Muffins will become your healthy go-to breakfast or snack.

 

Looking for the perfect after-school snack or on-the-go breakfast? Then these Honey Banana Muffins made with whole wheat flour are the muffins for you! Make a batch and throw them in the freezer for busy mornings.

My kids love these muffins because they taste amazing  and I love them because they are made with healthy ingredients.

This is a fool-proof recipe that you will make over and over because they turn out perfect and delicious every time. These muffins are so light, fluffy and moist, no one will know that they are healthy.

So grab those overripe bananas you have sitting on your counter and let’s get started.


WHAT MAKES THESE MUFFINS HEALTHY?

These muffins are made with white whole wheat flour instead of bleached flour, honey instead of sugar, and Greek yogurt and applesauce instead of oil.

By making these simple substitutions, you are cutting back on calories, fat, and sugar . . . but not sacrificing flavor! They are still so delicious that no one will notice the difference.


WHY WHITE WHOLE WHEAT FLOUR?

White whole wheat flour is not a mixture of bleached white flour and whole wheat flour.

White whole wheat flour is made by grinding a soft white wheat (usually whole wheat flour comes from red wheat).

Both whole wheat flours have great health benefits, but whole wheat white flour has a lighter taste and texture, which is perfect for these muffins.

Healthy Honey Banana Muffins {No refined sugar}

These healthy muffins are made with clean-eating ingredients that your whole family will enjoy!
Ingredients
  • 1⅓ cup white whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon sea salt
  • ½ teaspoon cinnamon
  • 1 large egg
  • 3 ripe bananas, mashed
  • ½ cup unsweetened applesauce
  • ¼ cup honey
  • 1 teaspoon vanilla extract
  • 3 Tablespoons plain Greek yogurt
Instructions
  1. Preheat oven to 375 degrees.
  2. In a large bowl, whisk together the dry ingredients (flour, baking powder, baking soda, cinnamon and salt); set aside.
  3. In a separate medium bowl, lightly whisk the egg then add mashed bananas, applesauce, honey, vanilla and yogurt. Slowly add dry ingredients to the wet, mixing until just combined (be sure to not over mix!).
  4. Spoon batter into prepared muffin tin, filling each cup about ¾ full and bake for about 20-22 minutes or until a toothpick inserted into the center comes out clean.
  5. Allow muffins to cool, serve and enjoy!
  6. You can also freeze these muffins in an air-tight container for up to 30 days.

Healthy Banana Ice Cream {Nice Cream}

If you haven’t jumped on the banana “nice cream” bandwagon yet, you need to give this a try ASAP!

This little dessert is a guilt-free treat that even those with allergies or on specific diets (i.e. vegan, paleo, Whole30, sugar-free, etc.) can still enjoy.

So what is this banana ice cream all about? Basically you just peel some bananas, toss them in your freezer until they are completely frozen, then blend them in a high-powered blender. The frozen bananas will become creamy and a little gooey, kind of like ice cream!

If you like it to be more of a soft-serve consistency, eat it immediately after blending. If you prefer more of a hard ice cream consistency, put the blended bananas in a container and let it freeze again, then scoop it out and enjoy!

Let’s talk mix-ins! While the bananas alone are a delicious flavor, it’s the mix-ins that make it even better! Here are some of the mix-ins that we love:
-tablespoon of peanut butter
-spoonful of cocoa powder with a drizzle of honey
-mini chocolate chips
-strawberries
-spoonful of Nutella
-spoonful of cookie butter
-raspberries
-drizzle of caramel sauce

How many calories are in this banana “ice cream”? Compared to regular ice cream, this is SO much better for you! An average serving of this is half of a large banana, which comes out to be about 50 calories per serving. That’s it! Of course, after you try it, you are probably going to want more . . . but even if you have two servings, it’s only going to cost you about 100 calories!

Blender vs. food processor. In order for this to work, it’s crucial that you have either a high-powered blender or a food processor. The blenders that you can get for $20 are not high powered enough to make this work and the consistency will not turn out right.

Healthy Banana Ice Cream {Nice Cream}

This dessert is a guilt-free treat that even those with diet restrictions or allergies can enjoy!
Ingredients
  • 3 large ripe bananas
Instructions
  1. Peel the bananas and cut into even slices.
  2. Place slices into a resealable freezer bag and freeze for at least 2 hours (preferably overnight).
  3. Place frozen banana slices into a food processor (or high-speed blender). Pulse the bananas, then continue to blend until the blended banana starts to turn creamy (like the texture of soft-serve ice cream). Scrape down the sides as needed while blending.
  4. Serve immediately or place in the freezer and freeze solid for more of a hard ice cream texture.
