Pressure Cooker Honey Lime Chicken

Ingredients
  • 2 pounds boneless, skinless chicken breasts (thawed or frozen)
  • Juice from 2 limes (about ¼ cup juice)
  • 2 teaspoons chile powder
  • 1 teaspoon cumin
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • Black pepper, to taste
  • 4 cloves garlic, minced
  • ½ teaspoon liquid smoke
  • 3 Tablespoons honey
Instructions
  1. Place chicken breasts in the bottom of the pot inside the pressure cooker.
  2. Squeeze the juice from limes on top of the chicken.
  3. Sprinkle chile powder, cumin, onion powder, salt, pepper, garlic, and liquid smoke on top of chicken.
  4. Drizzle honey on top of everything.
  5. Place lid on top of pressure cooker and make sure that the valve is in the "sealing" position.Put this on the manual pressure cooker setting and set for 12 minutes if using frozen chicken breasts (only 7-8 minutes if using fresh, thawed chicken breasts).
  6. When the chicken is done cooking, let the chicken do a natural release (a.k.a. don't touch anything and just let it sit there) for 5 minutes, then move the valve to "venting" to release any pressure that is left.
  7. Remove the chicken from the pot and shred it (I used used 2 forks to pull it apart and it was so tender that it pretty much just fell apart).
  8. Throw the chicken back into the pot so that it can soak up the juices from cooking.
  9. Now you are ready to enjoy! You can eat the chicken as is or serve it in tacos, burritos, salads, enchiladas, nachos . . . the possibilities are endless.
Notes
If you are short on time, you could do a "quick release" as soon as it's done cooking, but I recommend a natural release for 5 minutes for juicier chicken.
