Greek Yogurt Chicken Salad Sandwiches

With Greek yogurt to keep it creamy and hold it all together, this dish will quickly become a family favorite!
  • 1 lb cooked chicken breast, shredded (you could use rotisserie chicken)
  • ½ cup diced red onion
  • ½ cup diced apple (I used a Fuji apple)
  • ⅔ cup grapes, halved (I used red grapes, but green work too!)
  • ⅓ cup dried cranberries
  • ¼ cup sliced almonds
  • ½ cup plain Greek yogurt
  • 1 tablespoon freshly squeezed lemon juice, or more, to taste
  • ½ teaspoon garlic powder
  • Salt and pepper to taste
  1. In a large bowl, combine all ingredients. Serve on rolls and enjoy!
